Another super simple quick dish. This can be made as a soup or made thicker and added to sweet potato or green veggies. Full of plant fibres and prebiotic benefits, lentils are the new black as far as I'm concerned. Im embracing the lentil at the moment. These little morsels of golden goodness have been sitting in the cupboard and its so good to be able to use them for a delicious meal without any fuss.
Recipe
Olive Oil
1 Onion Chopped
2 or 3 cloves of garlic (or whatever you want) more the better !
1 & 1/2 cups of washed yellow lentils
8 cups chicken stock or vegetable stock
1 tsp tumeric
1 & 1/2 tsp ground cumin
Heat oil in a pan and gentry fry the chopped onions. Add the chopped garlic, turmeric & cumin and continue cooking for a few minutes to infuse the herbal flavours.
Stir in lentils, add the stock and cook for 35 minutes. Stir several times during cooking, especially towards the ned to prevent lentils from sticking to base of pan.
Serve with chopped parsley, sprinkle of chilli flakes or fresh chilli. Salt and pepper to taste. Easy to add to other veggies too.
