In a large saucepan on medium heat, sauté garlic, onions and tomatoes in a little olive oil.
Add washed lentils, carrots, stock, chilli & thyme.
Bring to boil, reduce heat and simmer for 30 minutes or so. Once cooked, season and blend with a stick blender until smooth. Easy peazy !!!
To serve, add what you like maybe some small blanched broccoli florets or some crunchy sourdough, nuts.
